Peanut butter chocolate chip

Wet ingredients:

  • 1/2 cup natural creamy peanut butter

  • 2.5 tbsp melted and cooled coconut oil (can sub melted butter)

  • 1/2 cup coconut sugar

  • 1 egg, room temp

  • 1 tsp vanilla

Dry ingredients:

  • 1/2 cup packed almond flour

  • 3 tbsp coconut flour (not packed)

  • 1/2 tsp baking soda

  • 1/4tsp salt

  • 1 dark choc bar chopped or 1/3 cup chocolate chips (HU or Lilys)

  • Maldon salt for sprinkling at the end

  1. Preheat oven 350 degrees and line a baking sheet with parchment paper

  2. In a large bowl, add peanut butter, melted and cooled coconut oil or butter, coconut sugar, egg and vanilla extract

  3. Add in almond flour, coconut flour, baking soda and salt; mix with spoon until well combined. Fold in chocolate chips

  4. Use a cookie scoop to drop onto parchment paper about 2 inches apart

  5. Bake for 9-12 minutes and sprinkle with salt as soon as they come out of oven
